Cheesy Cashew Collard Wraps

Collard leaves make incredible wraps because they are both sturdy and flexible. This recipe blanches the leaves to make them soft and pliable, you can also use raw leaves for a crunchier wrap.

1 cup raw cashews, soaked for 2 hours, then drained

1/4 -1/2 cup water

Juice of 1/2 lemon

1 clove garlic, minced

1 tablespoon nutritional yeast

1/2 teaspoon sea salt

Pinch of black pepper

6 large collard leaves

1 red, yellow or orange bell pepper, cut into thin slices

1 cucumber, cut into thin slices

1 mango, peeled and cut into thin slices

1 avocado, cut into thin slices

1–3.5 ounce (100g) package of alfalfa sprouts
